Fresh from the garden . . .



Well. . .what must you do when the basil is growing like a weed . . .
and the garlic is "in bulb" ???
MAKE PESTO !
What a wonderful fresh melange of flavors!
So simple . . . . the only accompaniments needed are a piece of fresh bread
a sliced tomato and a glass of Sauvignon Blanc.
In our summer heat . . . .
THE perfect dinner!

1/4 c pinenuts
3 cloves garlic (finely chopped)
3 c fresh basil
1/3 c grated parmesean
2 T water
1 T lemon juice
1/4 c extra virgin olive oil
sea salt & pepper to taste

Place all ingredients in a food processor or blender and puree until
smooth.
Enjoy on toast . . or add more olive oil as a dipping sauce.
Mix with al dente cooked pasta.
Or . . . . The possibilities are endless!

I have a pile of fresh basil too and now I know exactly what I am going to do with it. Yours looks splendid so I hope mine will turn out too - thanks for teh recipe!
